About this deal

Until recently, some of the popular Manzanillas like La Gitana or La Guita were released as a Manzanilla Pasada, but due to their popularity and the consumer’s preference for a lighter style, nowadays they are bottled as younger wines. In addition, Amontillado tastes like hazelnut, while some styles of Olorosos come with notes of salted caramel and almonds, figs, citrus, or apple. When wine lovers use the name sherry, they think of a big family of wines, which can be produced in different cities including Jerez, El Puerto and Sanlúcar. As yeast dies when exposed to alcohol of over 16% ABV, fino sherry is kept at 15% ABV to ensure that it thrives. Especially since a lot of the discussions seem to take place on social media rather than in the appropriate meeting rooms.

Some claim it has notes of walnut and caramel or biscuit and almond, depending on how it was brewed.

Whereas the fino wine, lord of centenary sediments, wears a beautiful pale golden colour and offers a sharper and almond-like sensation. However, this would only be delaying the inevitable, as most sherries will spoil after 2-3 days of opening. Once overlooked and undervalued, sherry is enjoying a renaissance as more and more of us embrace the versatility of this Spanish fortified wine. Translating as “the lost” the name refers to the fact that this is an example of fino-amontillado, a now rare style of sherry that has been created under a coating of flor but has spent longer in the butts than most finos. The unique character of each sherry is also influenced by the geographical location; the climate of the region; the almost white chalky soil the vines are grown on; the history of the area; the cathedral-like cellars the wines are aged in; the local solera blending system of different vintages; the proximity to the sea; the list goes on.

They are virtually identical fortified wines, fruit of albariza lands, from the Palomino grape, with the same miraculous biological ageing, the same irreplaceable sediment system, the same Cadiz genius. This is also the perfect partner for those deep-fried seafood treats the Spanish do so well, such as Andalucian speciality tortillitas de camarones. No matter how often you point to legal documents, wine will always be a matter of perception and interpretation.

Compared to the blended creams listed above, a PX sherry is naturally sweeter at over 212 grams per litre, which is why it’s often used as a sweetener in itself. Sherry —especially a dark, rich Oloroso or a tangy Amontillado, can be just as intense as an aged whiskey. If this Manzanilla wine continues to pass to the following criaderas, it becomes Manzanilla Pastrana.

The wines under the ‘sherry’ umbrella range from the lightest and driest in the world right through to the sweetest and everything in between. Officially, Vejer de la Frontera is one of the most beautiful villages of Spain, you should come and meet us! We have written an article about the difficult discussions on Fino de Sanlúcar, we’ll not go into that again. In Sanlúcar de Barrameda, the “Fiesta de la Manzanilla” is celebrated every year, promoting the wine and hosting tastings and degustations. Unlike fino, amontillado, oloroso et al this is a sweet sherry thanks to the grape variety used to make it.When you taste it, you’ll notice that apple note again, there’s a creamy texture, a salty tang and a long nutty finish. SoupWhether in a wine glass, splashed into the soup itself or, ideally, both, sherry is one of few wines that can comfortable handle this awkward clash of liquids. Manzanilla producers are offended because “that other city” is taking credit for “their” Manzanilla.
