If the grout is new, wait at least 48 hours—72 is better—before applying grout sealer. This gives the fresh grout enough time to dry completely. Otherwise, you could get cloudy or bubbled results. I can see the reason for the general "don't silicone hobs" rule, but if used sparingly, why can't it replace the foam (as a water seal) and avoid the problem described above? I.e. where the cover won't sit flush because the clamps can't compress the foam and/or flex the chassis while trying. After he left I was getting it square and trying to remove the excess foam. I noticed the problem described above where the stainless cover wasn't sitting down onto the worktop. The clamps only have so much pull and they're on the corners and the chassis flexes against the foam.
