Origin: Carnaroli rice is an Italian variety of rice, often referred to as the “king of rice” due to its preferred use in making risotto. Fuchsia Dunlop trained as a chef at China's leading cooking school and is internationally renowned for her delicious recipes and brilliant writing about Chinese food. Every Grain of Rice is inspired by the healthy and vibrant home cooking of southern China, in which meat and fish are enjoyed in moderation, but vegetables play the starring role. Dunlop's first love, if I can be so bold to claim, is Sichuanese cuisine, and the recipes in this cookbook have a fair bit of overlap with her excellent Sichuan cookbook, but there's also enough new dishes to keep it interesting. I have all three of her cookbooks, and I love them all, but if I was going to give just one to a friend it would be this one. Her Sichuan cookbook is a close second, but with fewer photos it's perhaps not as welcoming to less experienced cooks. The secret to Sichuan cuisine is in the balance of flavors. The key ingredient to many of these dishes is the Sichuan peppercorn, which provides the unique "numbing" spiciness to balance the "hot" spiciness of the chiles. Sichuan peppercorns were illegal in the United States until 2005, as they were falsely suspected of carrying disease. This may be why Sichuan restaurants in America fail to capture genuine Sichuan flavors.While Japan takes great pride in its unique white rice, it wasn’t always the way it is today. Originally unprocessed brown rice was the main staple of Japanese farmers. But, with the introduction of more advanced processing methods, over time pure white rice began to be seen as a symbol of status and power in Japan. Only the elite of the elite ate white rice. The more elite you were the whiter your rice was and the less of other foods you ate. But, as is mentioned earlier, the grain processing method leads to a loss in micronutrients and in the case of rice vitamin B-1 gets cut away. Uses: Coconut rice is often served as a side dish with various savory dishes, especially those with strong flavors like curries or grilled meats. It is also enjoyed as a sweet dish, particularly when paired with tropical fruits or as a dessert with a drizzle of syrup. You might try it in our Thai Coconut Curry. Colusari Red Rice Origin: Parboiled rice is processed rice rather than a specific rice variety, and it is produced in several rice-growing regions globally. It can be found in long, medium, or short-grain varieties, depending on the original rice type. I've been recommending this book even since before it came out, and overall, it's really good. The illustrations and glossary are great (some really appetizing photos!), and she includes lots of handy reference pictures, which should really help people who are trying to find the right ingredients, or who want a reference of how certain cuts should look.
