Instant coffee is an entirely different drink to freshly brewed coffee. It's a bit like comparing fresh orange juice to orange squash. And some people prefer squash to the real thing. You don't have to prefer the so-called superior product - each to their own. Drink as is or add a sweetener of your choice. There are plenty of options: Regular sugar, brown or dark muscovado sugar for a more robust flavor, maple or agave syrup, honey just to name a few. Cold brew is a coarser ground coffee, extracted in cool water over an 18-24 hour period. Because the coffee grounds are not heated, some of the more bitter molecule are not released, giving cold-brewed coffee and entirely different flavor profile and overall sweeter, smoother taste. It is also less acidic and therefore easier on the stomach! Freshly brewed coffee does tend to be a strong drink which does not lend itself to being watered down. Instant works better as a more mild drink.
