It’s been a long winter and I think we’re all ready for spring. While most people look for the first robin as the official sign of spring, I look for the pastel dishes and bunny decor at my local housewares store. It truly screams “Spring is HERE!” to me.

To make them safe for a gluten free diet, most obviously, you would need to use gluten-free self-raising flour and gluten free baking powder. Along with the above tools, you’re also going to need a couple of ingredients. Most of these you’ll be able to find at your local supermarket. Store bought cake mixes will make approximately 60 mini cupcakes. You may have some mix leftover you can use to bake extras with. Remember to beat your butter plenty enough when making your buttercream.
