Slice off the tops of the tomatoes and set them aside. Carefully scoop out the pulp and seeds from the tomatoes, leaving a hollow shell. Reserve the pulp for later use. In a small pot, add 1 tbsp olive oil and sauté the chopped onion. Add the rice and stir for a few seconds, until wet.Add the diced zucchini and grated carrot and mix well to combine. Place neatly in the pot (I use the same one the cabbage was boiled) starting from the edge to the centre. Second and third layers may be placed on top, then cover with the plate (which must be exactly the size of the pan). This is done so that when the lahanodolmades are boiling they will not open. Unfortunately, as I am on aa diet, this is something I now have to avoid but everything in moderation is allowed! Mash the reserved tomato pulp in a food processor and add half of it to the rice mixture. Season with salt and pepper to taste and mix again.
