Place one chocolate coated half sphere upside down on the heated plate and move it around to slightly melt the rim.

Once the bomb breaks, stir and add in more marshmallows and top it with whipped cream and sprinkle some chocolate shavings on top.If using on a cake this will need to be drip consistency so you won’t put it in the fridge to stiffen.

Reheat in 15 second increments, stirring well and checking the chocolate's temperature with a candy thermometer in between each reheating. Candy melts can be used (and don’t require tempering – just melting) but they will change the flavor of the hot chocolate bomb. You don’t want the chocolate to cool too much before you have a chance to add it to your molds, however, you also don’t want it to overheat which causes the chocolate to seize. This recipe has been tested with both Original Baileys Irish Cream and Baileys Almande Irish Cream, and both work great.

In the event of any safety concerns or for any other information about a product please carefully read any instructions provided on the label or packaging and contact the manufacturer. To serve the hot chocolate, you just need to steam or microwave 8 ounces of milk until it’s warm/hot. So, making sure you have your small plates on hand, both microwave-friendly for heating, and at the ready will help you to move quickly through the molding process.

When you take it out, look for any holes that remain, add a second layer of chocolate, if you want, to make it firmer. Unmold Spheres: Remove mold from the freezer and carefully remove the chocolate spheres from the mold. When it’s cool slightly, place the white chocolate into another sandwich bag to drizzle over the bombs. Connect to the two spheres by either heating one edge of your sphere and connecting it to the other, or by piping some fresh chocolate around the edge of one bowl and adding the two sides together. If you don't want to use coarse sugar on top, you can use crushed candy canes or other candies or sprinkles.

And what better way to do that than with a warm and indulgent mug of S’mores Bailey’s Hot Chocolate?

These bombs will stay tasty for up to two weeks (if you have the willpower to keep them that long 😉).
